Over the years the boards have carried Koppi and Morgon from Sweden, the Coffee Collective from Copenhagen, Gardelli from Italy and Colonna from England, which is close to a list of the roasteries a serious drinker would want to work through anyway. The offer is deliberately narrow at any given moment \u2014 typically one coffee set up for espresso and a couple more available as hand-brewed filter \u2014 so that everything on the bar is dialled in rather than merely available.<\/p>\n<p>The equipment is where the seriousness becomes visible. Espresso runs through a multi-group Slayer, a machine built for flow control rather than for pushing out hundreds of identical cups an hour. All the grinding is handled by an EK-43. Filter is poured by hand through the Kalita Wave and other drippers, with the choice of brewer matched to the coffee rather than applied uniformly, and a batch-brewing device covers the fast option without dropping the standard. This is a bar assembled by somebody who competes, not by somebody buying a package from a supplier.<\/p>\n<p>The most telling detail is the water. The counter can serve you coffee brewed with ordinary tap water, with water re-mineralised to the specification used in brewing competitions, or with something in between. Almost nobody does this, because almost nobody is willing to explain to a customer why the same beans taste different depending on what they are dissolved in. If you have any interest in how coffee actually works, this is the single most interesting thing you can order in Edinburgh \u2014 and if you have none at all, the flat white will still be excellent, because the fundamentals underneath the theatre are sound. That explains most of what is unusual about the place: the narrow list, the constant rotation, the equipment budget spent on grinders and water rather than on interior styling, and the willingness to turn away the laptop trade that would fill a city-centre basement instantly.<\/p>\n<p>The link that matters most is with Koppi, the Swedish roastery in Helsingborg founded by two former national barista champions. Lowdown&#8217;s relationship with them is close and long-running, and a rotating selection from their range is often the backbone of the bar. For Edinburgh that connection did something specific: it put a Scandinavian light-roast sensibility permanently on offer in a city whose coffee culture, for a long time, ran on darker and more comfortable blends. The awards the caf\u00e9 has picked up since opening are a consequence of that position rather than the reason for it.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"What_kind_of_visit_it_suits\"><\/span>What kind of visit it suits<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Start with what it is not for. There is no Wi-Fi, and at weekends laptops are not welcome at all. Power sockets exist, but without a network they serve to keep your phone alive rather than to support a working afternoon. If you were planning to open a spreadsheet here, plan again \u2014 this is the least laptop-friendly serious caf\u00e9 in the city centre, and it is that way on purpose.<\/p>\n<p>What it is superb for is drinking coffee attentively. A solo visitor at the bar end of the room, ordering a filter and being told what it is and where it came from, is the use case the whole operation is built around. Table service and paying as you leave remove the transactional feeling entirely, and nobody will hover over an empty cup. The room is small enough that it never feels cavernous and quiet enough that you do not have to raise your voice. Inside, the room runs in an L-shape and is genuinely small \u2014 something in the region of a dozen tables, mostly for two, a couple for three.<\/p>\n<p>The design is stripped back: plain plastered walls, concrete underfoot, a white ceiling, strip lighting supplemented by daylight coming in at the front. The furniture has been described as carrying a Japanese influence, and the overall effect is calm and slightly austere without being cold \u2014 a room that gets out of the way of what is on the table. There is no attempt at the industrial-vintage styling that most specialty bars reach for.<\/p>\n<p>The consequence of that scale is that the caf\u00e9 fills easily and cannot absorb a crowd. It is walk-in only, with no bookings, so at a busy moment you may be waiting for a table or taking one outside. It is the sort of short, changing menu that a small kitchen can execute well, which is a much better bet than a long one it cannot.<\/p>\n<p>Whether the baking is done on the premises is not something the caf\u00e9 publishes, so it is fairer to describe the food as carefully chosen than to credit it with an in-house bakery it has not claimed. What matters practically is that you can eat a proper light meal here rather than being limited to something sweet, which is not true of every specialty bar of this standard.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"When_to_come\"><\/span>When to come<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>The doors open early enough for the pre-work crowd, and the first half of the morning is the calmest and most rewarding stretch: the bar is fresh, the filters have just been dialled in, and there is time for a conversation about what is on the board.<\/p>\n<p>The weekend is the important distinction, and not only because of the laptop rule. The New Town&#8217;s main shopping axis is at its busiest then, and a small basement caf\u00e9 directly beneath it absorbs that traffic; expect a wait at the middle of the day. Weekday afternoons are the sweet spot for a table without a queue.<\/p>\n<p>August, as everywhere in this city, is its own weather system \u2014 the whole centre is at capacity for the festival, and a room of this size cannot expand to meet it. In winter the sunken courtyard loses some of its appeal but the interior gains it, and the coffee list, which rotates through the year, is a reason to come back in a season you have already visited.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"Getting_there\"><\/span>Getting there<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>The caf\u00e9 is in the heart of the New Town, on the great Georgian axis that runs between the two big squares at either end of the first New Town plan. It is a couple of minutes from the main shopping thoroughfare and its tram stops, and a short, mostly level walk from the principal railway station \u2014 level being worth something in this city.<\/p>\n<p>Edinburgh has no underground; buses converge on the New Town from everywhere, and the tram runs along the parallel street to the south. Look for the steps down rather than a shopfront: the caf\u00e9 is below pavement level and easy to walk straight past, which is one of the reasons it has kept its atmosphere despite standing on one of the busiest addresses in Scotland.
